Candy Cane Beet Salad

Description

In this beautiful salad from Boots in the Oven, raw beet slices are paired with oranges, goat cheese, and roasted edamame.

Ingredients

  • 3 medium beets, sliced 1.5mm to 3mm thickness (use a mandolin!) or as finely as you can cut it 
  • 1 orange, zested and supremed, juices reserved
  • 150 g roasted or steamed edamame 
  • 60 g soft goat cheese 
  • 2 T extra virgin olive oil 
  • 1 T lemon juice 
  • salt and pepper

Instructions

  1. Whisk the reserved orange juice, lemon juice and a pinch of salt together until salt dissolves. Continue to whisk while drizzling in olive oil.
  2. Toss beets with the dressing.
  3. Arrange all of the remaining ingredients on a platter and top with extra dressing and fresh black pepper as desired. Eat and enjoy!
