Crisp kalette, apple and cheese salad

Crisp kalette, apple and cheese salad


  • 1 small garlic clove, crushed
  • 1 tsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 5 tbsp extra virgin olive oil
  • 2 tsp clear honey
  • ½ x 25g pack chives, roughly chopped
  • 160g kalettes , shredded
  • 50g parmigiano reggiano, shaved
  • 2 apples, cored and thinly sliced


1. For the dressing, put the garlic, mustard, vinegar, oil, honey and most of the chives in a jam jar and shake until combined (or whisk together in a bowl). Season and set aside.

2. Put the kalettes in a large bowl with ½ the dressing and use your hands to massage the dressing into the kalettes for 1-2 minutes until slightly softened. Arrange the kalettes, cheese shavings and apple slices on plates, with the remaining dressing and chives on top. Serve straight away.
