Roasted Mushroom, Pepper and Leek Pasta

A hearty weeknight dish


  • 400g mushrooms
  • 1 pepper
  • 1 leek
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • salt and pepper, to taste
  • 2 tablespoon creme fraiche
  • 200g pasta, shape of your choosing
  • 2 tablespoon grated parmesan


  1. Preheat the oven to 200C, and put a pot of salted water to boil on the hob.
  2. Chop all the veg into bite size pieces and dress with oil, oregano and season with salt and pepper to your taste.
  3. Put it all into a large roasting dish and spread out in a single layer. Roast veggies for 20 minutes until tender.
  4. When the water comes to a boil, cooke the pasta according to package instructions. When ready, combine the pasta and veggies in one pot. Stir through the creme fraiche and top with parmesan.
