Description

Squash Winter Salad

Ingredients

  • 1 delicata squash
  • 1 Little Gem lettuce, leaves separated
  • 2 endives, shredded
  • 2 cloves of garlic
  • sea salt
  • 5 tablespoon butter, melted
  • lemon juice
  • ½ cup pepitas, toasted
  • 2 ripe avocados, slivered

Instructions

  1. Heat the oven to 190 Celsius. Toss the squash in olive oil and roast until golden brown
  2. Crush the garlic with the salt into a paste and work the melted butter into the paste and add a generous squeeze of lemon juice
  3. Arrange the lettuce leaves and endives in a large bowl and drizzle with half the butter and toss
  4. Add the pepitas, avocados and squash, more dressing and toss.
