Description
Cauliflower, dill and cherry tomato salad
Ingredients
- 1 cauliflower, cut into florets
- 10 cherry tomatoes, halved
- 1 bunch rocket
- 1 tablespoon dill, chopped
- 1 tablespoon whole grain mustard
- 2 tablespoon capers, roughly chopped
- 2 cloves garlic, crushed
- 2 tablespoon cider or wine vinegar
- 120 ml olive oil
Instructions
Add the cauliflower florets to a pan of boiling water and boil for 3 minutes, remove from the water, run under cold water and leave in the colander to drain. Make the dressing. Put all the ingredients in jam jar and shake (with the lid on!) Heat a griddle pan or dry frying pa. Drizzle the cauliflower with some olive oil, sprinkle on some salt and pepper. When the griddle is really hot, add the florets in batches. Cook till charred on all sides. Place in a large bowl. Add the tomatoes, rocket and dill. Pour over the dressing and gently toss. Serve.
