Crunchy slaw with apple and golden beetroot
Ingredients
- 0.5 red cabbage, thinly sliced
- 2 golden beetroots, peeled and julienned
- 2 small eating apples, such as Cox, thinly sliced
- 2 large handfulls of raisins
- 2 large handfulls of walnuts, chopped
- juice of one lemon
- 1 teaspoon mustard
- 2 teaspoon red wine vinegar
- 2 teaspoon agave nectar or honey
- 2 tablespoon olive oil
Instructions
Combine the dressing ingredients together and mix well, season to taste. Toss the salad ingredients together in a large serving bowl. Add the dressing and mix with your hands to combine.
