Flat Beans with Tomatoes

Flat beans with tomatoes


  • 3 tablespoon olive oil
  • 1 small onion, roughly chopped
  • 2 teaspoon ground cumin
  • 400g tomatoes, roughly chopped
  • 0.25 tablespoon tomato puree
  • 0.25 tablespoon brown sugar
  • juice from half a lemon
  • 250g flat beans, cut into strips
  • 2 sprigs of mint
  • 2 cloves garlic


Heat the olive oil in a heavy pan.

Saute the onion and garlic till golden and soft.

Add cumin, tomatoes, salt and pepper. Stir for 5 mins to coat in oil.

All 50 ml water, tomato puree, sugar, lemon juice.

Cover and cook on a medium heat for 15 mins.

Stir and press down from time to time to help the tomato disintegrate.

Stir in the beans, cook for a further 10 mons. Adding more water if it starts to dry out.

Stir in some olive oil, the mint and check seasoning. Serve.


Can be served hot as a side dish or cold as a salad.
