Cucumber Lemon Salad
An easy summer salad. It’s fresh, it’s cooling, and it couldn’t be easier.
- 2 lemons
- Coarse salt
- 1 shallot
- 2 cucumbers, peeled
- Black olives
- Olive oil
- Peel the lemons like you would an orange. Remove all the skin and the white pith. You can remove the lemon slices from their membranes, or leave them on. Coarsely chop the lemon slices up. Place in a bowl and sprinkle with 1/2 teaspoon salt. Set aside.
- Peel and cut the shallot in half, then slice thinly. Combine the shallot with the lemon and mix well. Set aside.
- Cut the cucumber in half lengthwise, then cut into halfmoons. Place on a plate and sprinkle lightly with salt. Add in as many black olives as you like. Add the lemon/shallot mixture with all of its liquid and combine well. Drizzle generously with olive oil, adjust salt and pepper to taste and serve.
