Greek Stuffed Peppers

This simple stuffed peppers recipe looks almost too good to eat. Bursting with Mediterranean flavour, they're perfect for a healthy vegetarian supper or delicious lunch. 15 minutes preparation and then just 25 minutes in the oven. Easy.


  • 4 peppers
  • 1 tablespoon olive oil
  • 200g feta cheese, crumbled
  • 200g cherry tomatoes, halved
  • 50g black olives, pitted
  • 1 red onion, thinly sliced
  • zest of one lemon
  • 1 clove garlic, crushed
  • 4 tablespoon basil


Heat the oven to 200 degrees Celsius, Halve each pepper lengthways and discard the seeds and membrane. Brush pepper with a little oil and place on baking tray, Combine feta, tomatoes, olives, onion, lemon zest, garlic and half the basil and use to fill each pepper, Drizzle with the remaining oil and bake for about 25 minutes or until the peppers are tender. Garnish with basil.


You can prepare the peppers up to 6 hours ahead and cook them when ready to serve. Try long romano peppers as an alternative.
