Nick's Apple Turnovers

Nick uses vegan puff pastry, which is surprisingly a name-brand, pre-made puff pastry, so you don't have to search far and wide for it!


  • 1 package of puff pastry
  • 2 apples
  • 1 teaspoon cinnamon
  • ½ cup brown sugar and a teaspoon for the glaze
  • ¼ cup oat milk, for the glaze
  • ¼ cup water


  1. Preheat the oven to 200 degrees C
  2. Slice up the apples, cook the apples with the sugar, cinnamon and water, in a saucepan over medium heat for about 5 minutes. Remove from heat, puree (mash it up or in a food processor) and let cool.
  3. Line 2 baking sheets with parchment paper. Roll the dough on a liberally floured surface to a 20 x 15 inch rectangle. Cut into smaller squares or circles at least 4 inches wide.
  4. Spoon the apple mix into the centre. Fold over and press the edges together to seal.
  5. Place turnovers on a baking tray, leaving about 2cm between them.
  6. In a small bowl, whisk together a teaspoon or two of sugar and dash of cinnamon for a glaze.
  7. Carefully brush or spray the turnovers with a little oak milk. Sprinkle the cinnamon sugar over them until they're well coated.
  8. Bake for approx. 25 minutes or until they're golden, making sure to rotate the baking sheets 180 degrees halfway throughout the baking duration.
  9. Use a spatula to transfer them to a cooling rack. Serve warm. The turnovers will keep in an airtight container at room temperature for about 1 week.
