|Rainbow carrots with a honey glaze||300g rainbow carrots peeled and sliced on the bias1 teaspoon fresh ginger grated1 teaspoon honeypinch of chilli powder25g butter|Blanch carrots in salted water. When just tender remove and place into hot sauté pan with a little of the blanching water. Add the honey and butter and ginger and sauté. The butter will emulsify with the water to create a glaze.
