Description

Wild garlic pesto

Ingredients

  • 50g wild garlic
  • 25g shallots, roughly chopped
  • 25g walnuts or pine nuts
  • 100ml olive oil
  • 25g parmesan, grated

Instructions

Sort through the leaves, discard any tough stalks, etc. Put all the ingredients (except the cheese) in a blender and blend till smooth, add the cheese, taste and adjust the seasoning with salt and pepper. If storing, spoon into jars, press down leaving a gap at the top of the jar to add more olive oil. This will stop the pesto from oxidising. Store in the fridge.
